Cauliflower Tabbouleh

Here’s a great side dish option with a low-carb spin! Tabbouleh, a Mediterranean side dish typically made with the grain bulgur, is a vibrant option to complement any good protein dish. This version is made with cauliflower as the base. Prep is easy, and it requires no cooking.

Ingredients

  • 1 head cauliflower
  • 1 cup sliced tomatoes
  • 1/2 cup parsley
  • 2 green onions, finely sliced
  • 1/2 cucumber (quartered lengthwise and deseeded, then thinly sliced)
  • Juice of 1 lemon
  • Handful of finely chopped fresh mint (or 1 T dried mint)
  • 1/3 cup olive oil
  • Pepper, to taste

Instructions

  1. Blend the full head of cauliflower in a food processor until it has the consistency of rice. Tip: process half the cauliflower head at a time, otherwise the bottom gets too fine and top too chunky. Don’t be afraid to use the denser part of the center cauliflower tree.
  2. Once blended, set aside in a bowl.
  3. Next, add to the bowl of cauliflower the remaining ingredients - tomatoes, parsley, onion, cucumber, lemon juice, fresh mint, olive oil and pepper to taste.
